做(zuò )法:春笋切成片(piàn )后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。 -
