做法:洗净宰好鲫鱼(yú ),洗(xǐ )净淮山(shān )和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用姜块(kuài )在锅上擦(cā )一遍,放两勺(sháo )油,待(dài )油六成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个(gè )半(bàn )小时,下盐调(diào )味即(jí )可品尝。 -
