做法(fǎ ):春(chūn )笋切成片后(hòu )加少许盐捞(lāo )出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖(mèn )。 -
