做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡(pào )软,拍(pāi )裂(liè )一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油(yóu )六成热下(xià )鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材(cái )料,武火煮(zhǔ )沸,转中小火煲一个半小时,下盐调味即可品尝。 -
