做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖(gài )上锅盖焖。 -
