做(zuò )法:洗净(jìng )宰好鲫(jì )鱼(yú ),洗净(jìng )淮山和薏米。用清水把陈(chén )皮泡软,拍裂一(yī )小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦(cā )一遍(biàn ),放两勺油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下盐调味(wèi )即可品尝。 -
