做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和薏米(mǐ )。用清水把陈皮泡软(ruǎn ),拍(pāi )裂(liè )一(yī )小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油(yóu )六成(chéng )热下鱼,煎至微黄。煮沸瓦(wǎ )煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小时,下盐(yán )调味即可品尝。 -
