做(zuò )法:洗净(jìng )宰好鲫鱼(yú ),洗净淮山和薏米(mǐ )。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热(rè )锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮(zhǔ )沸,转中小(xiǎo )火(huǒ )煲一个(gè )半小时,下盐(yán )调(diào )味即可品尝。 -
