做法(fǎ ):洗净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用清水把陈皮(pí )泡(pào )软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦(cā )一遍,放(fàng )两勺油,待油六成热(rè )下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲(bāo )一个半小时,下盐调味即可品(pǐn )尝。 -
